Talapia Sweet Sour with Mango
Am kind of lazy all the time, especially when the head of the house not around. That's why I always cook 'out of recipe protocol'. Whatever cross my head, experiment it. If ok, it might be next time. If not, just forget it. This time, the kids said "macam 3 rasa la mama..." So, I will try on chicken for Mat Rock to taste... :-D
Talapia Sweet Sour with Mango
1 whole talapia - deep fried and put in a suitable dish plate
young mango - grated coarsely
daun kesum (malay basil) - finely chopped
kaffir leaves
5 pcs bird chilli (put more for hotter taste)
3 cloves garlic - crushed
1 onion - diced or wedged (i prefer wedges cut)
1 inch ginger - thinly lengthwise cut
1 red chilli - sliced
2 small scoops oyster sauce
3 small scoops chilli sauce
3 small scoops tomato ketchup
1 tbsp honey
1 tbsp vinegar (can be substitued with lime/lemon juice)
water
Cooking oil
Heat cooking oil on medium heat. Stir fry garlic till golden then add in onion, ginger and chilli till fragrant. Add in all sauces, honey, vinegar and water. Bring to boil and thicker. Add in grated mango, daun kesum, kaffir leaves and bird chilli. Let it simmer for few minutes more.
Pour on ready-fried talapia. Serve.

Doughnuts
500g high protein flour
75g castor sugar
1 pkt instant yeast
8g salt
40g milk powder
3g baking powder
5g bread improver
1 egg
50g magerine
250 ml water
Put all ingredients except water in a mixer bowl. Mix them under medium speed till breadcrumbs mixture is formed. Slowly add water into it till a dough is formed. Knead till the dough becomes elastic and does not stick to the mixing bowl. Take out and rest for 10 minutes.
Punch the dough to let the air out. Divide the dough to small round shape - 50g each. Rest another 10 minutes. Roll out and shape. Proof it till becomes double in size.
Deep fry till golden - always turn it over to get an even cook and colour.

Patin Asam Pedas Bunga Kantan
PATIN ASAM PEDAS BUNGA KANTAN
1 ekor ikan patin - dipotong2
bunga kantan - dipotong serong
serai - diketuk
cili kering - direndam
biji bawang merah
bawang putih
halia
kunyit
perahan asam jawa
air
garam secukup rasa
serbuk perasa jika mahu
minyak untuk menumis
Cuci ikan dengan air asam jawa. Ketepikan.
Kisar cili kering, bawang merah, bawang putih, halia dan kunyit.
Panaskan minyak dan tumiskan serai dan bahan kisar hingga naik bau dan terbit minyak.
Masukkan ikan dan gaul rata. Masukkan air dan perahan asam jawa. Biar mendidih dan ikan masak.
Masukkan bunga kantan. Perasakan dengan garam. Biarkan ia mereneh selama 15 minit, matikan api.
Siap utk dihidang.

Sambal Goreng
SAMBAL GORENG RESIPI EMAK
A) Deep fried n aside
tauhu - didadu (bean curd - diced)
tempe - didadu (tempe - diced)
kentang - potong memanjang (cut lengthwise)
cili kering dipotong2 (cut dried chillies)
Rendam / Soaked
soon (vercimilli glass noodles)
fucuk (foo chuk)
kincham (dried lillies)
kobis hiris halus memanjang (cabage cut lengthwise
kacang panjang hiris serong (long bean - sliced slanting)
lobak merah hiris memanjang (carrot - sliced lengthwise)
udang segar (fresh prawns)
kicap soya (soy ketchup)
minyak masak (cooking oil)
B) Bahan tumis / stir-fry ingredient
bawang merah dihiris (sliced shallots)
bawang putih dihiris (sliced garlic)
cili merah hiris (sliced red chillies)
ikan bilis (anchovies)
Panaskan minyak dan tumis bahan B hingga kekuningan. Masukkan udang, kacang panjang, lobak merah, kobis dan kincham. Kacau goreng hingga setengah masak. Masukkan A dan kacau rata.
Masukkan fucuk and soon dan tuangkan kicap soya. Gaulkan hingga semua bahan bersalut dengan kicap sepenuhnya. Kacau goreng lagi selama lebihkurang 3 minit.
Heat oil and stir-fry B ingredients till golden. Add in prawns, long bean, carrot, cabbage and dried lilies. Stir-fry well till half cooked. Add in A mix well.
Add in foo chuk and glass noodle and pour in soy ketchup. Stir well until everything well covered with ketchup. Stir-fry for another 3 minutes.
p/s: Besides prawns and anchovies, boiled meat or deep fried liver can be added.

Blueberry Cheesecake
BLUEBERRY CHEESECAKE

Bahan
15 graham crackers,crushed (biskut oreo 150gm==1 paket)
2 tablespoon melted butter
2 packages 8 ounce) cream cheese (beli yg 500gm kat Bagus)
3/4 cup white sugar (castor sugar)
1/2 cup fresh milk
2 biji telur
1 cup sour cream (1 bekas plain yogurt)
1 tablespoon vanilla extract(lemon flavor)
1/4 cup all purpose flour
1/2 cup whipping cream
Blueberry filling
Cara membuatnya
1. Panaskan oven pada suhu 160C. Lengserkan loyang 9 inci (springform).
2. Gaulkan biskut digestive/oreo dengan mentega cair. Masukkan dlm loyang dan tekan agak padat. sejukkan dalam peti ais.
3. Pukul cream chesse dan gula hingga smooth, masukkan susu segar.
4. Kemudian masukkan telur satu demi satu, pukul sedikit saja.
5. Masukkan sour cream, vanilla, whipping cream dan tepung. Gaulkan adunan hingga rata.
6. masukkan adunan ke dalam loyang berisi biskut tadi dan bakar selama 1 jam [bakar secara steam bath]
7. kemudian bakar lagi dgan api bwah 10 minit dengan suhu 140C.
8. Kemudian biarkan di dalam oven selam 5 hingga 6 jam. Ini untuk mengelakkan kek tersebut merekah.
9. Apabila kek telah sejuk sapukan dengan blueberry filling dan kalau rajin hiaslah ikut creativity masing2…
Disebabkan tak paham apa tu vanilla extract (lemon flavor), kita masukkan 2 sudu besar lemon juice. Pada kita base biskut orea lebih sedap dari digestive biskut tu. Creamcheese yang mahal tu lebih sedap kalau digunakan... hehehe...

Simple Soup
1 pkt mee lidi or vercimilli rice - cooked in boiling water
Half pot of water
2 shallots - sliced
1 clove garlic - crushed
2 squids - ring cut
8 prawns
1 pkt fish ball - halved
1 pc fish cake - cut n sliced
carrot - sliced
celery - diced
sawi
1 tomato - quartered
chicken stock
salt to taste
Bring water, garlic and shallots to boil. Add in chicken stock, fish balls, fish cake, carrot and celery. Simmer for 2 minutes. Add in squids and prawns. Bring to cooked. Put in tomato and add salt to taste.
To serve: Place mee in a soup plate and pour the soup on top. Garnish with onion spring and fried onion if any.
Let's Baking
Butter Cake
225g butter
180g castor sugar
Mix well together
200g eggs without skin (can add in water or fresh milk to get enough weight)
1 tsp vanilla essence
sift together
200g flour
10g baking powder
15g milk powder
Beat butter and sugar till sugar dissolve.
Add in the eggs mixture little at a time and beat till it mix well with butter each time adding.
Use wooden spatula/scoop and fold in the flour mixture slowly.
Bake at 180 deg C for 20 minutes and turn down to 160 deg C for 10 minutes.

eeemmm... nasi tomato...
This is the simplest Nasi Tomato (tomato rice) I ever had. Served with Ayam Goreng Sos Tiram (oyester sauce fried chicken). Both recipes were created on the spot when this lazy feeling sitting quietly and nicely on my head, but all 4 stomachs need to be filled in short time. Luckly, Mat Rock agreed with me... hahahaha... The best part, everybody was enjoying it so much (never had time to lift up their head... hahaha...). Was it really delicious and yummy or were they starving????

Nasi Tomato
2 cups basmathi rice - washed n soaked 10 minutes
2 cups water
5 pcs dates - slice
1 onion (golf ball size) - thinly sliced
1/2 inch young ginger - thinly sliced
cardamon, star anise n cinnamon stick
1 cup tomato ketchup
salt to taste
cooking oil
Heat cooking oil and add cardamon, star anise and cinnamon stick, fry till fagrant.
Add in onion and ginger, fry till golden.
Add in tomato ketchup, mix well. Add in water and salt to taste. Let it boil.
When boiling, add in rice and mix well till covered. Cooked the rice as usual.
When the rice becomes to dry, throw in the dates. Reduce the heat till the rice well done.
Serve.
Ayam Goreng Sos Tiram
6 pcs drumsticks
pepper
black pepper - ground
2 tbsps oyster sauce
1 tbsp honey
Cooking oil to deep fry
Combine all ingredients together. Marinate 30 minutes.
Deep fry on medium heat till done.
Serve.

Happy Birthday Iman
I made this specially for Iman on his 9th birthday last December. He never had any birthday party, officially, in his life before, 'coz each year fall on fasting month and once on hari raya itself. This time, the date was away from any festival, we celebrated at his tuition centre.

Pulut Kuning
Ordered by Nina the Cake's Sifoo as a surprise for her Beloved Husband's birthday. Weighed about 4kg @ 10x10x3 inches in size.
PULUT KUNING
2 kg pulut )
3 sudu kunyit serbuk )direndam semalaman
2 sudu teh garam )
250 gm santan pati )
1 ltr air ) campurkan sebati
garam secukup rasa )
Didihkan air dalam periuk kukus. Kukus pulut selama 20-30 minit.
Angkat dan gaulkan dengan santan sehingga rata dan sebati.
Kukus semula selama 30 minit.
