Blackcurrant Cheese Cake

Done this for Iman's 12th birthday. Trying to prepare something different this time, get rid of any choco base, luckly found a pack of cream cheese that will expire soon. Based on availability of ingredients in my kitchen this cake was created.
Topped with blackcurrant jam and whipped fresh cream.


Blackcurrant Cheese Cake
Crust:
Chocolate Cookies - crushed
Butter - melted

Mix well crushed cookies and melted butter then press at the bottom tray. Keep in the freezer until set.
Cream:
300 gm cream cheese
90 gm fine sugar
150 ml blackcurrant yoghurt
3 tblsps blackcurrant syrup
3 tblsps evaporated milk
2 big eggs
3 tblsps flour

Preheat oven at 160 degree Celcius.
Combine cheese, eggs, sugar, yoghurt, syrup and milk in a bowl. Mix until well blended. Lastly fold in flour into the mixture. Mix well.
Pour the mixture into the baking tray.
Bake 'bain marie' for 40 minutes. Turn off the oven and leave the cake in the oven to cool without open the oven's door.

Keria Labu


500 gm labu manis - kukus dan lecek
250 gm tepung gandum
4 sudu besar gula pasir
1 cawan air
minyak goreng secukupnya

campurkan tepung ke dalam labu sedikit demi sedikit dan uli hingga doh lembut.
gentel dan buat lubang di tengah2. sapu sedikit tepung di tangan supaya doh tidak melekat semasa digentel. susun atas loyang yang ditabur tepung.
panaskan minyak dan goreng hingga keemasan.
masak gula dan air hingga pekat. masukkan kuih siap goreng dan gaul hingga gula melekat dan kering.

Bingka Labu

Sekarang apa2 pun mesti nak dijadikan bingka. Kali ni Labu al Pumpkin jadi mangsa. Seperti biasa penggunaan santan memang dielakkan dan digantikan dengan susu segar atau susu cair. Konon2 biarlah jadi menu hidangan sihat.

BINGKA LABU MANIS

Bahan
500g labu manis - buang kulit dan kukus smp lembut
5 biji telur besor
500 ml susu segar
200 gm gula - boleh kurangkan atau lebihkan ikut selera
200 gm tepung gandum
1/2 sudu teh garam

Cara
Lecek labu yang sudah dikukus hingga hancur. Ketepikan.
Panaskan oven 180 darjah Celcius. Lengserkan loyang dengan mentega. (sy guna loyang 12"x12")
Campurkan telur, susu segar, garam, gula dan tepung. Kacau dengan 'whisker' hingga semua bercampur sebati dan tidak bergentel. Tapiskan.
Masukkan labu lecek dan kacau hingga sebati. Tuangkan ke dalam loyang.
Bakar dalam oven selama 35 minit atau hingga masak.

Bingka Roti

Mengpelbagaikan penggunaan roti yang sudah hampir kepada tarikh luput, bingka adalah cara yang paling mudah. Ini resipi paling ringkas yang diolah berdasarkan beberapa resipi yang terdapat di alam maya.


Bahan
3 bj telur
7 keping roti gardenia
1 cwn tepung gandum
1/2 cwn gula
1 camb mentega atau majerin
1/4 camt garam
500ml susu segar
1 camt esen vanila

Cara
Rendamkan roti yang dikoyak kecil ke dalam susu.
Kisar gula dan telur (guna blender je). Kemudian masukkan majerin. Kisar lagi.
Kemudian masukkan esen vanila, garam dan tepung. Kisar lagi.
Akhir sekali masukkan campuran roti dan susu, kisar lagi hingga sebati.
Tuang ke dalam loyang bingka yg telah dilengser, dan bakar atas api perlahan selama 1 jam.

After very long break...

I left my blogs unattended for so long... really missed updating them but I couldn't help to find any space to hanging out here. Too many things to catch up. Owh! Really??? Emmm... well... actually I've no reason for that and nothing to update lately, more on recycle activities.

I received many requests for fancy/decorating cookies class. I kept on giving them tonnes of reasons to escape from handling a class. No reason, again... But someone had purposely bumped into my studio and told me, "I want to learn that fancy cookies, that's why I'm here now."

So, these photos show it all...
She brought these home... all of them!!! TQ Julie.
