Sour Cream Cake

I've done this cake before and turned out soft, light and tasty. Originally it is called Sour Cream Coffee Cake but there's not even a pinch of coffee been used. Don't know where does the coffee come from. I prefer to name it as Sour Cream Cake. Fruit Cake

Rich of dried mixed fruits. Favourite to everyone who tasted it. 'Wiped out' in a minute. Can't stop eating till finish.

Sweet Sour Layered Cake

This is my 'long time dreamt wanna do' cake - Kek Lapis Masam Manis before the haw flakes meet the expiry date. I bought the square shape haw flakes during my 'jalan jalan cari makan' in Kuching a year ago. Aiyooooooo... have to fly to Kuching to get those square haw flakes...

This is my second attempt of 'do-it-myself' for layer cake type. Again, I choosed Chef Noraini Zakaria's recipe from her book 'Variasi Kek Lapis'. Not bad huh?

Pizza

Today's pizza - sardine with brokoli, cherry tomatoes and crab stick. More pineapple slices and diced green capsicum. Looks colourful, huh? ;-)

White Loaf


250g high protein flour
2 tsp instant yeast (use 1/2 packet of mauripan)
1 tsp improver
15g sugar
1 tsp salt
13g shortening
160 ml water

Mix dry ingredients and shortening with low speed till mixture becomes breadcrumbs. Add water gradually and knead till dough soft and elastic. Take out from mixer and round-shape the dough. Cover with damp cloth and let it rise double.

Glaze the loaf pan with shortening. Divide dough into 2 or 3 portions. Round shape them and arrange in the pan. Allow dough to rise double in size.

Glaze with eggwash and bake in oven at 180 degree Celcius for 20-30 minutes.

Cream Layered Cake

Hello everyone!!! Let's learn how to layer a cake with freshcream. So, in the future, let your family, guests and everyone taste your very fresh, decorated cake serve just from your tiny kitchen. No more from the bakery...

1) A whole sponge cake
2) Cut horizontally into 3 pcs3) Sprinkle with syrup - to keep the cake moist4) Spread freshcream on the first layer5) Sprinkle with chopped fruits (canned mandarin orange as shown in the picture) and combine the next layer on top
6) Do step 3 - step 5 to the 2nd layer and combine the last layer7) Coat the whole cake with cream and decorate as desire. 8) Emmmm... yum! yum! 9) Peach Layered Cake

My 1st Layer Cake - Duo Colours Layered Cake

This is my first layer cake done all by myself. Not bad huh!!! Recipe by Chef Noraini Zakaria, I choosed the simplest for a start. Many people refuse to make this type of cake because of the time consuming during the process. Actually, it was not that hard if we know the techniques. It was fun, fun and fun all the way till the ends of baking.

Let's Pizza

I made these pizzas on weekends after such a long time took a break from kneading work. The request for pizza was repeatedly been asked but I just don't listen to it. So, I prepared two different types of filling - Sardine with Brokoli and Sardine with Onion . Both types wonderfully delicious. No more having pizza in the hut but now we get it in the house... :-D

Glaze pizza base with gravy (tomato puree + chilli sauce + tomato sauce + oregano = mix well).
Spread mashed sardine on top, then sliced button mushrooms, chopped pineapple, diced capsicum and blanched brocolli. (Omit the brocolli for Sardine with Onion Pizza).
Sprinkle grated cheese (mozarella + cheddar).
Bake at 180 degree celcius for 12-15 minutes.

Mud Cupcakes





I tried a recipe from a magazine name 'SEDAP' issue No. 4. It's called Mud Cupcakes. Topped them with ganache.

120 ml water
30 gm cocoa powder
150 gm dark cooking chocolate, diced
125 gm unsalted butter
1/2 tsp slt
100 gm castor sugar
4 eggs, separated
125 gm flour

  1. Heat up water and cocoa powder. Stir till dissolve. Add in diced cooking chocolate. Stir to well dissolved.
  2. Add in unsalted butter and 1/2 portion of castor sugar. Stir till butter dissolve. Off fire and add in egg yolks. Beat well.
  3. Gradually pour mixture into flour and continue beat till well mix. Aside.
  4. Beat egg whites and salt till soft peak. Gradually add in another 1/2 portion of castor sugar while continue beating till fluffy.
  5. Gradually add in the egg white into flour mixture while slowly stirring.
  6. Pour batter into thick paper cups.
  7. Bake for 25 minutes at 180 degree celcius.
Yield: 21 pcs
Note: Omit the salt if salted butter is used.

Almond Brownies

this is to BIL hari raya open houseI baked two heart-shaped almond brownies covered with ganache for 2 different occassions. One for a birthday mum ordered by Mega and the other one I brought to my BIL house for his hari raya open house. Finished in a minute... anything with chocolate is always a choice.


MY CHEWY GOOEY YUMMY BROWNIES

250g butter - potong kecik
400g chocolate - potong kecik
6 eggs
340g brown sugar
2tsp esen vanilla
20g chocolate emulco
80g tepung gandum
60g cocoa powder
140g kacang walnut/pecan/almond/macadamia (optional)-toastkan
  1. Panaskan oven suhu 160C. Sediakan dan alas tray 11X11.
  2. Double boil butter dan chocolate hingga cair, ketepikan biar suam sikit.
  3. Masukkan telur, gula, esen dan chocolate emulco dalam satu mangkuk, guna hand whisk , kacau hingga gula cair.
  4. Tuang adunan butter dan coklat tadi kedalam mangkuk dan gaul rata.
  5. Ayak tepung gandum dan cocoa powder, jika bubuh kacang, masukkan dan gaul. Tuang tepung kedalam mangkuk diatas, gaul hingga rata.Jangan gaul terlalu lama.
  6. Tuang dalam tray dan bakar 160C/50 minit-1jam (bergantung pd oven).
  7. Bila masak, biarkan dalam tray hingga sejuk. Lebih sedap kalau disimpan semalaman.
  8. Sedap dimakan sama ada begitu shj atau bubuh ganache atau dgn icecream atau dgn sos kastad.

It's a blue cake




An urgent order by a friend for her sons birthday. She wanted a blue cake... the inside and outside must be blue and a blue cartoon charater on top.
Finished with blue buttercake and a blue smurf was drawn. That's it.
