Mud Cupcakes





I tried a recipe from a magazine name 'SEDAP' issue No. 4. It's called Mud Cupcakes. Topped them with ganache.

120 ml water
30 gm cocoa powder
150 gm dark cooking chocolate, diced
125 gm unsalted butter
1/2 tsp slt
100 gm castor sugar
4 eggs, separated
125 gm flour

  1. Heat up water and cocoa powder. Stir till dissolve. Add in diced cooking chocolate. Stir to well dissolved.
  2. Add in unsalted butter and 1/2 portion of castor sugar. Stir till butter dissolve. Off fire and add in egg yolks. Beat well.
  3. Gradually pour mixture into flour and continue beat till well mix. Aside.
  4. Beat egg whites and salt till soft peak. Gradually add in another 1/2 portion of castor sugar while continue beating till fluffy.
  5. Gradually add in the egg white into flour mixture while slowly stirring.
  6. Pour batter into thick paper cups.
  7. Bake for 25 minutes at 180 degree celcius.
Yield: 21 pcs
Note: Omit the salt if salted butter is used.
