

120 ml water
30 gm cocoa powder
150 gm dark cooking chocolate, diced
125 gm unsalted butter
1/2 tsp slt
100 gm castor sugar
4 eggs, separated
125 gm flour
- Heat up water and cocoa powder. Stir till dissolve. Add in diced cooking chocolate. Stir to well dissolved.
- Add in unsalted butter and 1/2 portion of castor sugar. Stir till butter dissolve. Off fire and add in egg yolks. Beat well.
- Gradually pour mixture into flour and continue beat till well mix. Aside.
- Beat egg whites and salt till soft peak. Gradually add in another 1/2 portion of castor sugar while continue beating till fluffy.
- Gradually add in the egg white into flour mixture while slowly stirring.
- Pour batter into thick paper cups.
- Bake for 25 minutes at 180 degree celcius.
Yield: 21 pcs
Note: Omit the salt if salted butter is used.
